Farm Il Cocco

Organic farm since 2000

Since 1700 the farm Il Cocco has been part of the property of the Bindi family who initially entrusted the management of the lands to sharecropping. The current property was left in 1955 to grandfather Giovanni who dedicated himself to the reforestation of the fields, the cultivation of vineyards for family use, and in 1972 to the opening of the farm as an agriturismo (agritourism), one of the first in the province (license n.2 had been granted). Today the company is directed by Giacomo, who since 2000 has dedicated himself to the production of wines with exclusively organic methods and sustainable hospitality In addition to offering genuine hospitality the main objective is to cultivate the farm’s land respecting nature using principles of organic and biodynamic farming.

Farm since 1955

In Montalcino, with distant origins

Owned by the Bindi family since the days of sharecropping, the great-grandfather turned it into a managed farm in 1955, then an agritourism in 1972, and in 2000 Il Cocco obtained the organic production certification.

Il Cocco

A military outpost from the 1400s

For centuries, Poggio Cocco has dominated the Orcia and Ombrone valleys, overlooking Mount Amiata.
This strategic hill takes its name from Cocco Salimbeni, a powerful lord who, in the early 15th century, controlled the Rocca di Castiglione d'Orcia and the troops along the Via Francigena, the ancient pilgrim route to Rome.
Podere il Cocco served as a military outpost thanks to its privileged position: from here, one could survey the Rocca di Castiglione d'Orcia, Cocco Salimbeni's fortified residence, to the east, and gaze out to the Mediterranean Sea to the south.
This historical legacy still permeates the atmosphere of the place today, where the ancient stones and breathtaking views recount centuries of Tuscan history, from medieval battles to the peace of the countryside, transforming a military control point into a haven of tranquility and beauty.

Franco

A Bindi family farm for four generations

Thanks to the work of our ancestors, today we are living a dream.

Four generations of the Bindi family have tended and cultivated Podere il Cocco from 1900 to the present day. Gino Bindi, the family patriarch in the early 1900s, managed all the Bindi-Ciacci farms on horseback, becoming a legendary figure in these hills.
After the war, Giovanni Bindi inherited the farm from his great-uncle Gino and oversaw its complete renovation, opening the first guest rooms in 1972 with the historic agritourism license no. 2.
The farm was managed by sharecroppers who over time became true family friends, passing on to Giacomo, the current owner, an invaluable legacy of farming knowledge, traditional agricultural techniques, and respect for the land.
Special thanks to Franco Meattini, a sincere friend and invaluable guide who personally taught me the Tuscan art.
Today, that ancient knowledge is the deep rooted foundation on which organic farming and the Cocco philosophy of life grow: producing with nature, not against it.

The new generation

We value biodiversity

Regenerative Agriculture: Tradition and Innovation

At Podere il Cocco, we've been practicing regenerative agriculture since 2000, an approach that goes beyond simple organic farming to actively regenerate soil fertility and biodiversity.

Our philosophy combines the wisdom of ancient farming traditions with advanced innovative techniques: we use low doses of copper and sulfur, as our grandparents did, supplemented with effective microorganisms, volcanic zeolite, kaolin, wood vinegar, and propolis.

Every intervention is designed to strengthen the natural ecosystem, not replace it.

On our 6 hectares, we cultivate 3 hectares of Sangiovese vineyards for Brunello, olive groves of native varieties, permaculture gardens, and the Food Forest project, creating ecological corridors where bees, butterflies, wild birds, and small mammals coexist.
The spontaneous grass growth between the rows nourishes the soil, hosting hundreds of plant species, while minimal tillage preserves the soil's microbial life.
We have not used herbicides or synthetic fertilizers for over twenty years, practicing crop rotation and on-site composting.

This balance is reflected in our wines: authentic expressions of the terroir that reveal the complexity of a living ecosystem, where every element contributes to the final quality.
The goal is not to maximize production but to optimize quality, creating a self-sufficient company for future generations.
